Toasting in the New Year
Festive holiday drink recipes

Wassail

2 ½ gallons apple cider
1-1/3 cups brown sugar
12 oz frozen lemonade, undiluted
12 oz frozen orange juice, undiluted
1 tbsp whole cloves
1 tbsp whole allspice
Cinnamon sticks
Ground nutmeg

Combine the cider, brown sugar, lemon juice, and orange juice together.  Bring to a simmer.  Tie cloves, allspice and cinnamon sticks in a piece of cheesecloth to make a spice bag.  Add spice bag to liquid.  Simmer 20 minutes.  Remove spice bag.  Sprinkle nutmeg on top.

Holiday Cranberry Punch

4 cups of cold cranberry juice cocktail (regular or reduced calorie)

6 oz can of frozen lemonade concentrate (thawed)
6 oz can frozen limeade concentrate (thawed)
¼ cup sugar
4 cups cold club soda

In a large pitcher, combine cranberry juice, lemonade concentrate, limeade concentrate, and sweetener.  Then stir in club soda.  Serve with ice. 

Coffee Mocha Punch

½ cup instant coffee
½ cup water
½ cup sugar

Add coffee, water and sugar to a regular pan on the stove.  Let it come to a boil and melt sugar.

In a punch bowl, add:

½ gallon vanilla ice-cream or soy ice-cream
½ gallon Dutch chocolate or plain chocolate ice-cream or soy ice-cream
1 gallon milk or soy milk

Combine the coffee mixture with the ice-cream and milk in the punch bowl.  Stir until chunky and slushy.  

 

Famous Holiday Eggnog

2 quarts eggnog (regular or vegan)
1 can (5.5 oz) Libby’s Kerns Apricot Nectar

Mix together and enjoy the memories it brings!
