Breakfast in Bed

Delicious, Easy Recipes for Lazy Mornings

Mamalega (Cornmeal) with Bananas, Honey and Sour Cream

Cook organic yellow corn grits according to package instructions.
Place the cooked grits into individual bowls and add the following to each bowl:
½ banana cut into small pieces
1-2 tablespoons of sour cream (to desired creaminess)
2-3 teaspoons of honey – raw preferable (to desired sweetness)
Stir to distribute the flavors and enjoy!

Baked Raspberry and Cream Cheese French Toast

4 slices of your favorite type of bread cut into ½ inch pieces
½ cup of raspberries (fresh or frozen)
2 oz of cream cheese cut into ½ inch cubes
3 eggs
1 cup of milk
1 tablespoon maple syrup (plus additional, for serving later)

The night before, prepare the following:
Grease two 8-ounce ramekins or two disposable aluminum mini loaf pans (approximate dimensions: 5 ¾ in. x 3 1/4 in. x 2 in.)
Place half the bread cubes in each of the ramekins.  Add raspberries and cream cheese cubes.  Top with the remaining pieces of bread. 
In a separate bowl, mix the eggs, milk and one tablespoon of maple syrup together.  Pour the egg mixture over the bread cubes.  Cover and let soak overnight in the fridge.

The next morning:
Bake the French toasts at 350 degrees for 25-30 minutes, until slightly brown.  Remove the french toast from ramekins and serve with maple syrup.
